You know that moment? That fleeting moment when your trying to do the right thing. I know it's so hard to recognize. For most of us it doesn't last long enough to even register, and when it does we do something amazing. We create. Yes. I had that moment. That moment when the universe paused long enough for me to create. And this time I did it. I made something I could be proud of.
I. Made. Dessert.
Not just any dessert. I made something we could all eat and not feel guilty about, and that, is something to get excited about.
So what was it? Oh, you know, just this little thing I like to call Cheesecake Mousse. As you'll get to know, I tend to not follow recipes...and create as I go. You'll grow to love this about me. Well, unless you don't. Anyway.
This was my first take at it so of course I didn't measure anything.

CHEESECAKE MOUSSE
(And you can eat it all day guilt free)
1 - 8oz package of cream cheese
1c - Nonfat Greek Yogurt
1/4tsp of vanilla (about....I didn't measure)
Pure Stevia to taste (I use stevia from TrimHealthyMama)
1/4c milk (yeah...didn't measure that either)
1 drop lemon essential oil
Top with strawberries (or you know...whatever you like)

Whip together cream cheese and yogurt using electric mixer or stand mixer. About 5 min. Add vanilla and stevia. Whip more. Add milk. Whip again. Add Lemon essential oil. Whip. Taste. Like it? If so, you are done. If not. Tweek!
My little one loved it!!! And I loved that it was good for me...and him! Oh! And that he could have as much as he wanted before bed and he wouldn't be up all night. Mom-1 Brock&Bedtime-0 (Well really they still beat me because I can't get that kid to stay in bed....but that's another topic)
This would be great with a lot of different toppings. MMMMMMMM!!
